Toddler Approved Cloud Bread Recipe
April 18, 2018
If there is anything you guys know about me by now is that I have a picky eater and I love oregano. Well, this recipe fixes or rather takes care of both these issues (if you know what I mean *nudge nudge*)
Cloud Bread is perfect for a gluten free, keto friendly diet and more importantly, it gets some much needed protein in the toddler’s tummy! Even better is the fact that cloud bread can be frozen. Grab some ziplock baggies and wax paper to create separation and you’re good to go!
What Can I Do With This Cloud Bread
We use it to ‘make’ pizzas , sandwiches, or even as quick protein bites as snacks.
When I was introducing this to my toddler, I started with using it as mini pizzas. And yes I took the easy way out – store bought Pizza sauce!. Pour some pizza sauce, some shredded cheese and small chicken chunks and heat up for 30 seconds. Pizza is ready!
Ingredients:
- 3 eggs
- 1/4 tsp Cream of Tartar
- 4 Tbsp Cream Cheese/Sour Cream/Cottage Cheese
- Pinch of Salt
- Pinch of Garlic powder (optional)
- 1/2 tsp onion powder
- No Oregano (Aha I got you, was just checking to see if you’re paying attention!)
Method:
- Preheat the oven to a toasty 350 degrees.
- Start with separating the egg whites and yolks in two different bowls
- Add Cream of Tartar to the egg whites and beat until stiff peaks form then set aside.
- Beat egg yolks and add the cream/cottage cheese or sour cream to the eggs until smooth. Add in the salt, onion powder and garlic powder.
- Now gently fold in the egg whites. Make sure not to mix the spoon around, the mixture should remain fluffy.
- Use an ice cream scoop or a big serving spoon, pour the mixture in a tray lined with baking sheet. Make sure to leave space between scoops since the mixture will spread. About 6 scoops on a regular sized tray should be good.
- Let it bake for a good 18-22 minutes and let it cool.
Voila you have cloud bread!
Try it out, you’ll love it! It may take some variations to get it according to your own taste but it’s so worth it. Leave a comment to let me know how it worked out for you or if you made any changes to the recipe!
This looks so good! Can we substitute cream of tartar with something else?
Yes! Cream of tartar uses it’s acidic or tart elements to add stability to the fluffed up eggs whites.
You can substitute it with lemon juice or white vinegar. SO for every 1/2 tsp of cream of tartar you can use 1 tsp of lemon juice or white vinegar. Hope this helps 🙂
