Gekko’s Spinach Surprise

My daughter is OBSESSED with PJ Masks so I try to use that to my advantage from time to time. Especially since Gekko is her favorite PJ Masks character. Just so you know, he’s the one in green.

Soo bearing that in mind, I call this spinach dish, Gekko’s Spinach Surprise!

It’s simple, yummy and really quick to make!

INGREDIENTS

1/2 lb chicken boneless

Salt & pepper to taste

1/2 bunch of spinach chopped

3 tb sp yogurt/cream

1/4 tsp of onion powder(optional)

1 tb sp ginger garlic paste

1/2 tb sp Worcestershire sauce (optional)

2 tb sp oil(or as per preference)

METHOD

Heat up oil and saute ginger garlic paste. Sprinkle salt, pepper and Worcestershire sauce (you can skip it if on strict keto diet) on chicken and then fry it in the sauce pan until cooked 3/4 of the way(feels springy to touch). Set chicken aside after that.

In the same pan add spinach and saute it with the remaining chicken marinade/oil.

After it gets darker and softer in look and feel, add yogurt/cream. Keep stirring until the who texture gets a greenish color. You can blend it at this point or just add the chicken back in. Cover and Let it simmer for 7-10 minutes.

Sprinkle some cheese ( I ran out of shredded cheese so just popped some American on top) and it’s ready to serve! You can incorporate it into pastas too or check out the yummy recipes I posted for picky eaters to get more ideas.

Kids, parents, grandparents all love it! Plus it’s keto friendly too (Don’t forget to calculate the macros though!)
