Chicken Stock For the Soul – Basic Recipe

A lot of what I cook (when I cook that is. lol)  are  meals that are easy to make (hence chicken stock 😛). I don’t have the energy nor the time to make something complicated. Or maybe I’m just lazy, who knows at this point.

Having one basic chicken stock recipe kinda helps me out. I use it a lot  as a base for soups, pasta, pasta sauce, gravy etc. Plus you can freeze it too.

I just made some for my Picki Penguin since she was down with the flu and she did not hate it. So that’s a great sign!

Bearing all that in mind, I thought it would be great to share a simple basic recipe that can be used by anyone for pretty much anything.

Chick Stock For The Soul

Ingredients

  • Chicken bones from 1 chicken
  • 1 tbsp Ginger chopped/paste
  • 1 tbsp Garlic chopped/paste
  • 6-8 peppercorns
  • 1 medium onion cut in quarters
  • 1 medium tomato cut in half
  • 5 cups of water
  • Salt to taste

Method

  • Pour water in a pot and set the temperature to high -once it starts to boil , add the chicken bones.
  • Add the ginger, garlic, onion and tomato to the pot and let it boil on high for 5 minutes
  • Add the peppercorns and salt and let boil for another minute
  • Cover the pot with a lid and let it simmer on low heat for 15-20 minutes or until you start seeing oil bubbles
  • Adjust salt accordingly

Voila – Chicken stock is ready to use. Pop in some veggies for clear soup or even pour it in a mug for some warm comforting soul soothing feeling.
