Toddler Meals – Sneak in those Veggies

Alright so I have another protein and veggie collab for the toddler to consume. Since I have to get veggies in that belly I have to think of a million toddler meals so I can sneak them in.

These recipes turned out soooo good that I’m going to be making some for kids at a luncheon this weekend. Luncheon sounds so important doesn’t it. I feel like I should be wearing a hat while I say that! Okay back to the recipe. Its super quick and easy and you can use it on on your choice of protein, though not sure if the binding will work well with fish though.

That is an experiment for me to check!

Toddler Meals

Chicken & Veggie Cutlets

Ingredients

  • 1 lb chicken mince
  • 1 1/2 tbsp Worcestershire Sauce
  • 1 tbsp garlic powder
  • 1/2 tsp oregano
  • 1/2 cup parmesan cheese
  • 1/2 cup cauliflower, broccoli and spinach mince (Trust me on this!)
  • 1 medium size sweet potato
  • 1 medium size red potato
  • 1 tbsp cornstarch if needed for binding
  • Salt/Pepper according to taste

By know you’ll know Worcestershire sauce, garlic powder and oregano are my favorite spices. My toddler loooves the smell of oregano so I tend to sprinkle it on new foods to get her to try it. She’s been down with the flu so chewing is becoming a strenuous task for her😔

Method

  • In a pot add some water to boil. Cut both potatoes in 4 pieces (each) and set to boil.
  • I made these in the form of nuggets (no coatings). I ran the chicken mince through the mixer so it’s a little finer. Added Worcestershire sauce, oregano, salt and pepper; then combine together with a fork.
  • In the meantime I chopped up some cauliflower, broccoli and spinach chopped it very fine. Even a semi-solid form is good. Add it to the chicken mix along with parmesan cheese. At this stage the mince mixture will feel slightly wet. So we will add the starch.
  • Divide the mince into three parts. Add mashed up red potato in one part, sweet potato in the second part and both potatoes in the third one. If you feel the mince is too wet than just add both potatoes to the entire bowl without making separate portions.
  • Set the mince in the fridge for 20-30 minutes. After that you’re ready to bake/fry them.

You can use them as a burger patty, or  serve them with your choice of sauce. Our favorite sauce these days is the Creamy Sirachep (Ask me about this!)

Extras Tidbits

You can make this Keto friendly too.

Keto Alternatives – if you’re looking to make this Keto friendly then you can skip our on the potatoes with Zuchinni (I would sprinkle salt on it and let it be for 15 minutes then wash the salt off and use it ).  Or even dried Cauliflower mash. Yum!

You can use Almond flour in place of cornstarch as well.

You may also use eggs as a binding source.

To convert them in cutlets just dip them in flour (almond, regular), then dip them in a beaten egg and finally dip them in your choice of coating before cooking

Broccoli and Cheddar Soup

I started giving broccoli and cheddar soup to my LO with some Cauliflower purée in it. Just to get her to continue to to get used to the taste of Cauliflower (Never gave it to her when she was younger so I’m on the damage repair mode with these toddler meals!)

The soup’s pretty simple to make and here’s my take on it

Ingredients:

  • 2 Cups Chicken Stock (Check out this basic chicken stock recipe)
  • 1 cup of Broccoli heads (chopped)
  • Optional -1/2 cup Cauliflower mash or puree
  • 1-11/2 cup Cheese (as per your taste)
  • 1/3 cup cream
  • Salt & pepper  as per your taste

Method:

In a pot, bring the chicken stock to a boil and add the broccoli and cauliflower

Let it simmer for a good 15 minutes on medium to low heat.

Now blend the soup until it’s in a consistency that you like and then pop it back on to the heat.

Add the cream and the cheese while stirring. Give a quick taste test and adjust cheese accordingly. And that’s it really!

Soup’s ready!
